Bisque is a type of rich, thick, creamy soup that has been pureed so that it has an even texture. As the name suggests, the soup has its origins in France, although the dish is prepared all over the world with a wide variety of ingredients. 1 tbsp. olive oil
1 cup chopped onions
1 cup chopped leeks
1 tsp minced garlic
32 oz. button mushrooms
8 cups (no salt) vegetable broth
1 tsp fresh thyme
1 cup Half & Half

Directions:
1. In 6-quart pot, heat oil over medium heat.
2. Add onions and leeks. Sauté 4 minutes. Add garlic, cook additional minute.
3. Increase heat to medium-high. Add mushrooms and continue to sauté, stirring occasionally, until mushrooms are tender and reduced by one-third, about 12 minutes.
4. Stir in broth and thyme. Reduce heat to medium-low and simmer, partially covered, for 20 minutes.
5. Allow soup to cool 15 minutes. In batches, purée soup in blender. Return to pot and stir in Half & Half. Heat through, but do not allow mixture to boil.
6. Serve in small soup bowls.

Sounds warming. Unfortunately I don't care for the consistency of creamy soups. And thyme is being talked about now, especially thyme tea. Thyme I like.

Half and half is a type of cream with a fat content between 10.5 percent and 12 percent.
It can be used in cooking, but keep in mind that it has a much lower fat content than heavy (double) cream.

YIKES! Things I don't like - mushrooms, leeks and soup,(lol) even though I know I'm supposed to eat them for better health. If I could think of a way to substitute something else in there. (lol) Hugs... and Happy Wednesday!
