Almond Flour Bread : Low Carb, Gluten Free and Grain Free




If you are new to low-carb baking, bread made with almond flour is the easiest low carb flour to begin with. Low-carb almond flour bread is also naturally grain free and gluten free bread.

This is a classic recipe for low-carb almond bread. Throw it all together and voila! A low-carb almond flour bread that slices like the real thing - just low-carb. This should be your go-to recipe for a healthy low-carb bread. Perfect sliced for a low-carb sandwich, toasted or even used for a bread stuffing.

Ingredients:
15 slices

200 g almond meal/flour
2 tsp baking powder
1 tsp salt, or to taste
20 g psyllium husk
4 eggs
50 g coconut oil melted
125 ml of warm water

Almond flour doesn’t behave like wheat flour (which many readers may be accustomed to), because there is no gluten to make the bread stretchy or soft. So to make almond flour behave like regular wheat flour, eggs are used for structure, protein and air.

Many low carb recipes also use psyllium, which absorbs water many times its own volume. It also helps give structure and volume to a low-carb bread recipe, and adds plenty of fibre.

Psyllium is available as Husks whole or Powder and most low carbers do get theirs from sites such as Amazon.

Gluten Free Girl ... Shauna explains about Psyllium on her site ... she says:
" You may have noticed: we’re using psyllium husk in some of our baked goods recipes lately. And many of you have been writing to ask us — what the heck is psyllium husk?

Just a few notes for you...

Psyllium is sold as whole psyllium husks and psyllium powder. In my experience, the whole husks are the most effective. However, if you only have access to psyllium powder, then use that in equal volume as the husks in the recipe.

You don’t need psyllium for all gluten-free baked goods. Instead, think about the baked goods that truly rely on gluten — breads, pizza dough, rolls, pasta. These do well with a touch of psyllium.

And if you can’t find it at your store immediately, look in the health section. It’s often sold as COLON CLEANSER. That may not sound appetizing, but it works in baked goods. (You’re only using 1 to 3 tablespoons for an entire batch of bread dough, so the cleaning qualities are pretty minimal. But if you bake often, you’re going to be regular!)
Try some. I think you’ll be surprised at how well this works in gluten-free baking."

Hello Amy, could you consider using Coconut Flour in your recipes?

We tried this bread when we first started our gluten free diet and neither of us cared for it at all, we just totally cut out bread instead, but I know of others that didn't mind it
