Ingredients.
1 large celeriac
2 tbsp walnut oil
300ml vegetable stock
handful chopped walnuts
100g blue cheese, such as bleu d'Auvergne or Stilton
Method.
Heat oven to 190C/fan 170C/gas 5.
Peel, quarter and very thinly slice the celeriac - this is best done with the slicing blade of a food processor.
Toss in the walnut oil, salt and pepper, and spread over a gratin dish.
Pour over the stock and bake for 40-45 mins, then sprinkle with the walnuts, crumble over the cheese, then cook for 15 mins until crisp and golden.

It looks lovely. I can't get Mick to eat vegetarian, he doesn't think he's had a meal unless there's some meat on his plate.
I wanted to buy a rutabaga last week but they looked AWFUL. Just dreadful. However, the organic kale was a delight. Yum.

Hello Ivy - sorry the rutabaga you wanted to buy were not too good ... but Kale is definitely yummy. I like it sauteed like here http://thelowcarbdiabetic.blogspot.co.uk/2015/07/kale-sauteed-it-is-scrumptious.html ... but kale chips/crisps can make a nice change too!

I put my kale in the skillet as well. And I also make a pesto with it for over zukes. So yummy and also in soup, of course in soup.
Got myself a good rutabaga the other day. Gonna make a mash (zero dairy) to go with marylands (leg/thighs attached). See how we like it.
