Granola Bar Anybody : These are low carb

As I post this it's mid-week, so happy Wednesday to you all. Now, do you ever reach for that naughty shop bought snack bar ... you know at the back of your mind ... you really shouldn't but!!!

Well, how about making your own healthier version? Doesn't it make more sense to reach for "a healthier and lower-carb option to all the sugary bars out there. Make your own bars with nuts, seeds, healthy fats and truly dark chocolate." As one of the grand-children says 'Grandma it's yum and good for my tum' LOL !

If you'd like to give these home-made granola bars a try here is what you will need:
20 servings
10 oz. mixed nuts and seeds
2 oz. unsweetened shredded (grated) coconut
2 oz. dark chocolate with a minimum of 70% cocoa solids
6 tablespoons coconut oil
4 tablespoons tahini (sesame paste)
1 teaspoon vanilla extract
2 teaspoons cinnamon
1 pinch sea salt
2 eggs
3 oz. dark chocolate with a minimum of 70% cocoa solids, for garnish (optional)

Please see the cooking instructions at Diet Doctor site here

Tip!
A healthy nut and seed mix could consist of equal parts of almonds/hazel nuts/macadamia nuts, pecan nuts/walnuts, sunflower seeds, pumpkin seeds, sesame seeds and flax seeds.

The tahini (sesame paste) can be substituted with almond or nut butter. But remember that peanut butter has a lot more carbohydrates than sesame paste.

Your grandchildren are right. I love granola bars but I never make my own, perhaps this recipe will tempt me.

I'm just in from shopping and sat down with a cuppa, one of these would do very well, minus the shredded coconut for me though.

very nice, although I do try to stay away from granola bars in general. The worst is when I get started on cheesies or Doritos nacho chips.

I'm not diabetic, so I don't have to watch my carbs--though cutting back on them would certainly help my girlish figure:) But I do appreciate a recipe like this--the packaged granola bars are touted as healthy snacks, but when you look at the ingredients, it's another story! I'm going to have to save this recipe.

Thanks so much for the recipe, Jan!
A healthy snack in the afternoon is good, keeping one's good sugar stabile until dinner.
I usually buy a granola bar, but one might as well make them and store in a fridge - these look delicious!
