It's a recipe idea for a Low-Carb Strawberry and Rhubarb Upside-Down Cake. It can make a delicious dessert and because it's only 4g net carbs per serving, could fit into your low carb menu plans well. First of all - did you know that the rhubarb plant, with edible, long, fleshy, petioles is classified as a vegetable and not a fruit! Because it is a very versatile vegetable, and used for baking pies, cakes, muffins, breads, cookies, and more, it is often thought of as a fruit - however, rhubarb is a vegetable!
Nutritionally, it is low in calories, and this vegetable is made up of about 95% water, and is quite acidic (pH 3.1). The acid is usually well offset by the addition of sugar or sweetener when it is baked or stewed, or used as an ingredient in any recipe. An alternative to using granulated sugar when sweetening is to sweeten it by combining it with other, sweeter foods, such as strawberries, apples, peaches, or other fruits. Or try sugar substitutes, for those living the LCHF lifestyle many will have their own preferred sweetener.

8 ounces fresh rhubarb thinly sliced
4 ounces fresh strawberries hulled and sliced
1 1/2 cup super fine almond flour
1/3 cup granulated erythritol/stevia blend
1/4 teaspoon baking soda
1/8 teaspoon sea salt
1/4 cup unsweetened original almond milk (or other milk of choice)
3 large eggs
1 tablespoon whiskey (optional--if not using, add an additional tablespoon of almond milk)
1 teaspoon vanilla extract
2 tablespoons butter or coconut oil melted
Nutritional Details:Per serving size: 1/8th of the cake.
Fat 15g Carbs 7g Fibre 3g Protein 7g Net carbs 4g

I will eat pineapple upside down cake in a heartbeat, but the only way I like strawberries is with their little green caps on them. My grandmother had rhubarb in her garden and used to make rhubarb pies and cakes. To this day I don't care for rhubarb.
