Serves Four
2 tbsp olive oil
500g lamb neck fillet, cubed
1 onion, sliced
2 garlic cloves, finely chopped
125ml dry white wine
400g tin chopped tomatoes
2 x 5cm strips orange peel (pith removed)
2 sprigs thyme
1 red pepper, sliced
handful pitted Kalamata olives
sourdough or crusty bread, to serve, optional
2 tbsp olive oil
500g lamb neck fillet, cubed
1 onion, sliced
2 garlic cloves, finely chopped
125ml dry white wine
400g tin chopped tomatoes
2 x 5cm strips orange peel (pith removed)
2 sprigs thyme
1 red pepper, sliced
handful pitted Kalamata olives
sourdough or crusty bread, to serve, optional
1. Heat 1 tbsp olive oil in a large pan. Add the lamb and cook for 5-10 mins until browned all over. Remove from the pan and set aside.
2. In the same pan, heat the remaining oil, add the onion and cook for 5 mins until softened. Stir in the garlic and cook for 30 secs more.
3. Increase the heat and pour in the white wine. Bring to the boil, then leave to bubble for 2-3 mins until the liquid has reduced by half.
4. Return the lamb to the pan, along with the tomatoes, orange peel, thyme sprigs and 200ml water. Leave to simmer gently for 1 hr, adding a splash more water if needed.
5. Add the red pepper and olives and cook for a further 20 mins, until the peppers have softened. To serve, remove the orange peel and enjoy with some sourdough or crusty bread, if you like.

...lamb just isn't me thing.
Delicious!
Looks appealing.
Have a wondrous weekend.
I love lamb in any form but it's very hard to find here in my part of TX.
Sounds delicious! I have never had access to lamb most of the time, but when I have had it-we really like it Happy Friday
I love lamb. When I lived in the American West, you could get a grass fed lamb in the fall for a reasonable amount (then pay $25 to have it cut and wrapped for the freezer).

Hello,
Hubby and I do not have lamb often, maybe when we were eating out.
Thanks for sharing. Have a great weekend!
Right; it's tasty but rather expensive. We eat lamb usually during Passover (lamb is considered the sacrificial animal of this holiday).
Growing up lamb was one of the cheaper meats and appeared on the menu often. It is definitely not cheap now.
This looks great, yummy! Valerie
Looks so good! We are having 17C weather today so will put stew off till it cools down maybe tomorrow!
That sounds good.
Sorry Jan. I didn't like lamb even before I became a vegetarian.
I love lamb which we have at Easter. This sounds like a good way to use up the leftovers
That looks so yummy. I tried the chicken and leeks recipe the other day and it was super! Thanks for sharing.
Delicious! I love any kind of "soup" any day of the year!
I can't remember the last time I ate lamb. Husband doesn't like it so don't cook it. Growing up my mom used to broil lamb chops and I loved them.
I tried to fix lamb chops, I don't even remember how I tried to fix them probably 40 yrs ago...that was a first and last time for us. However, my mom fixed a lamb roast when I was a kid, and it actually melted in your mouth. It was delisious but I was so young, I have no idea how she fixed it.
This looks so delish..xx
lamb is lesser popular than goat meat here yet many people eat it specially on Eid u Adha occasion
thank you for great recipe Dear Jan !
The more we trend towards vegetarianism the less I can deal with the thought of butchering little baby lambs so that we can enjoy lamb chops. I think I will pass on this one.
we don't eat lamb, primarily because i have never cooked it and maybe i just don't feel comfortable with it!! this does however sound good, perhaps with a different meat for us!!
Hmmm, this sounds yummy and went to my to do list :-)
I never think of buying lamb but this stew sounds awfully good!
