I wonder if our modern GMO has something to do with this. I don't recall people have adverse reactions to gluten when I was younger.
It's probably going on 30 years now that I needed to self diagnose myself as everything was making me sick-back then the labels were not as good either on foods-and the doctors pretty much told me it was all in my head.
doing the elimination diet I figured out it was gluten in the old days this was called wasting disease, as gluten messes up your intestines and your body can't digest the food with the gluten. I had gotten down to 100 pounds before I figured it out myself.
there are tests now to know for sure if you have celiac disease or not.

I have never thought of a 21 day fast of gluten. I do enjoy good bread, but maybe I need to start processing my own grain... I'd have to triple the size of my garden and it's too late for this year.
I'm not saying a lot of gluten is good, especially for some people with certain immune diseases or other sensitivities, but I also think a lot of blame is put onto gluten versus processed flour. I know wheat flour has been genetically modified over many many generations which will affect some people. And I also think eating lower carbs overall is good. But carbs come in many forms, and gluten is not one of them as it is a protein. This was an interesting read though, and it is always good to read what people are saying.
I need to study more about this. I use almond flour and don't eat any sugar...and not many carbs but I do have trouble with stomach cramps. I might need to adjust some more. Thanks for the info!

I take spurts where I want a grilled cheese sandwich, but I never make sandwiches like most people seem to. Even PB & J. I can't say I'm gluten free, but I eat far less than most people. However, if you make pumpkin or banana bread, I will overindulge!

I had never heard about gluten free foods until several years ago. I don’t have food allergies or diabetes or Celiac Disease so am eating regularly. I have read that if someone goes gluten free without a legitimate cause it can result in vitamin and nutrient deficiencies. Being a senior I watch my vitamins, etc. But I am sure that for some people being able to buy gluten free food has been fortunate for them.
