Hello Mari, another lower carb alternative would be mashed swede/rutabaga

Very delicious! -Christine cmlk79.blogspot.com
These all looks so yummy. Thanks for these good suggestions.
...the Sausage with Cauliflower and Parsley Rice would be my favorite.
The eggplant dish looks amazing! I have never had cauliflower rice- but I would be willing to give it a try. :) Thanks for sharing.
I am not sure which I would choose....
I rarely see celeriac here. I must snap some up next time it appears in the stores.
The chicken with mustard and sage sounds particularly tempting from all of these recipes.
They all look and sound delicious!
Especially the first sounds very yummy!!!
All of those look delicious, and are recipes that I would definitely use. Thank.you, Jan. Xx
That's another great chicken recipe! I also like that aubergine and mozzarella dish: in Italy we make it in summer. Great post, Jan! Thanks for that!
Three very different recipes but all most attractive. I haven't had aubergine for a long time.
They do look delicious, Jan.
They all look good but I think it would be the chicken for me if I had to make a choice.
Good idea. I like the cauliflower and parsley rice idea. I have made the aubergine melts with dairy-free subs and tried it with courgettes too, they turned out well.
That looks incredibly yummy
Hello Jan,

hugs
