Rhubarb : Rhubarb : Rhubarb : Three Lower Carb Recipe Choices

Rhubarb with its elegant stalks of bright pink is perhaps a true symbol of spring. Rhubarb grows from a root that can live for up to 20 years, with some varieties growing stems up to 1.5m long. Choose firm, straight stalks that have a bright red colour. Avoid those that are limp or discoloured, or stalks that are very thick. Older stalks may be a bit stringy, like celery, but spring rhubarb will be tender, so there's no need to peel it. Rhubarb stalks are highly nutritious, containing calcium, manganese, vitamin C, vitamin K, fibre, and a whole host of antioxidants.

Today I am sharing three lower carb recipe choices that use this "fruit". I call it a fruit however, botanically, rhubarb is a vegetable (it's related to sorrel and dock) but its thick, fleshy stalks are treated as a fruit.

  3. I’ve loved rhubarb since I was a kid. Unfortunately I can’t have it now due to its high oxalate content. I still make one strawberry rhubarb pie every year for my husband and I have one slice.

  5. Crumble is what I call the rhubarb crisp. I haven't really found a topping I like that crisps up though :) Maybe I'll try the trick in this recipe.

  7. I think the last time I had it I musta been a kiddo. I did though order a veggie and fruit sheeter. Makes sheets to use in bakes instead of pasta and wheat noodles.

  10. Rhubarb sounds like a perfect spring treat, full of nutrients and flavor! The tips on selecting fresh stalks and using it in lower-carb recipes are great—I'll definitely keep that in mind next time I cook with rhubarb.

  19. I made strawberry rhubarb crisp yesterday. It was yummy. I don't think mine was low carb though, even if I did cut back on the sugar about 90%. Happy weekend.

  20. I planted rhubarb when I first arrived here, but it didn't take. I just replanted some, but it takes a year before it starts producing.

  28. OH I do love rhubarb. I worked as a waitress at the Chicken House at Knotts Berry Farm in 1960. One of the things on the menu was the famous rhubarb sauce. I fell in love with rhubarb then and love it to this day. I will use your recipes. They all are making me drool!!! Thanks! btw minimen wage back then was $1.20. A lot has changed...but they still serve rhubarb.

  35. Tis the season for rhubarb! I've made a cream cheese and rhubarb dessert, and a rhubarb cake (not low carb). I eat one portion and my husband eats the rest. I freeze portions that he can quickly thaw.
    I love the tartness of rhubarb in the spring.
