Ingredients
Serves Two
2 tsp oil
1 red chilli - deseeded and thinly sliced
1 large garlic clove - sliced
2 large eggs
400g can black beans
½ x 400g can cherry tomatoes
¼ tsp cumin seeds

handful fresh, chopped coriander
1 lime - cut into wedges

Instructions
1. Heat the oil in a large non-stick frying pan. Add the chilli and garlic and cook until softened and starting to colour. Break in the eggs on either side of the pan. Once they start to set, spoon the beans (with their juice*) and the tomatoes around the pan and sprinkle over the cumin seeds. You’re aiming to warm the beans and tomatoes rather than cook them.
2. Remove the pan from the heat and scatter over the avocado and coriander. Squeeze over half of the lime wedges. Serve with the remaining wedges on the side for squeezing over.

I know not everyone likes avocados, but they are so good for us. Not only are they an amazing source of healthy fats but they are also rich in essential micronutrients like magnesium. Magnesium is responsible for more than 300 reactions in the human body, all of which are essential for keeping us alive, and as a single serve of avocado contains 7% of the recommended daily intake of magnesium, I think I will carry on eating them ...

Looks good Jan. We had guest for lunch today and I made avocado wraps with other ingredients in them.
In Madeley/Perth we had loads of avocados - here they are either not ripe yet or already half black - we gave up... I think Germans think these are normal, but when you tasted the real "stuff" once... ALDI sometimes has good ones, will check! Cause... this sounds very yummy!
That is an interesting recipe but I would have to forgo the avocado as I don't like the taste or texture.

Here people avoid adding tomatoes in the omelette but I just love the combination of tomato and egg, I am so happy to restart taking eggs in my diet thankfully 🥰🙏

Bill loves this sort of dish, so I'll have to make it! I would have to have my eggs not runny at all, or maybe on the side, but I think it'd be just as yummy without them!
