~ White Chocolate Raspberry Swirl Cheesecake ~
Ingredients
Raspberry Sauce
1 cup frozen raspberries
1/4 cup water
1/4 tsp xanthan gum
Crust
1 1/2 cups almond flour
Powdered sweetener equivalent to 1/4 cup sugar
1/4 cup butter, melted
Filling
16 ounces cream cheese, softened
Sweetener equivalent to 3/4 cup sugar
1 1/2 ounces cocoa butter, melted
1 large egg, room temperature
1 tsp vanilla extract
3/4 cup whipping cream, room temperature

We have been getting a lot of sunshine lately, as sign that spring is on its way.

Dydd Gŵyl Dewi Sant Hapus!
ReplyDeleteBut what a day! Thank goodness, here in the actual place where Dewi Sant, Saint David, Patron Saint of Wales was born we have a week-long festival of events which culminate today with many outdoor events which this year have been sadly cancelled due to the horrible weather! Our annual St Davids Day Parade happened yesterday with hundreds of people coming from all over to take part. Our Eisteddfod was on Friday, our mini marathon yesterday, along with outdoor markets, and pop up Welsh food cafes in halls and meeting rooms. Windows have been filled with bunches of daffodils, bunting, and flags and the whole city-village looks splendid. Maybe next year, the weather will be kinder! March, for this year, has come in like a lion, so perhaps she will leave like a lamb?
