Take an empty baking tray and then ...

... decide what delicious foods you will put in it

will it be ...

One pan halloumi veggie traybake
Roasted veg topped with halloumi makes for an easy veggie dinner.
Simply throw all the veggies into one roasting dish,
top with slices of halloumi and finish under the grill.

or perhaps
Cornish Briam (roasted vegetable traybake)
Briam is a Greek slow-cooked roast vegetable dish.
No need to fry, no need to stir - use any vegetable you have in the fridge!
It's also vegan and gluten-free! Serve it as a side or main course.

or maybe
Spicy mozzarella aubergine/eggplant traybake
These stuffed aubergines/eggplants combine wonderfully with the crisp green beans and chickpeas.
This is a great stand-alone dish or it could be served with a bowl of couscous.

  1. Those one pan dishes are so easy to make and are good too! I never heard of halloumi - had to look it up!

  2. I need to make a decision; I'll have to check the fridge first, but this one-pan halloumi veggie traybake looks delicious, though the others look just as good.
I'm enjoying combining all sorts of vegetables more and more!

  3. Putting them in the air fryer, is that an option, too? Our oven takes forever to heat up...

    Hello Iris
There are a lot of one pan/traybake dishes you can make in an air fryer.
Have a search of the internet and choose a favourite :)

I will shortly do a separate post with some air fryer tray bake suggestions ...

    Enjoy your day

  9. That's a good suggestion for my lunch (it's only 7:11 am here).
Not sure what I have in the fridge at this point, but I'm sure I have enough for a one-pan baked trout with veggies.

  15. I like those roasted veggies! The air frier is a good option in spring and summer, as it does not make the kitchen warmer. Oven is better in winter :-) Great post, Jan.
