I have enjoyed catching up on all the recipes I have missed over the last few months and my favourites are the Tuscan chicken, Paprika pork with red peppers and the Chicken parmigiana. They all look very tasty.
I agree about seeing the simple pleasures in life and recognising that we still have a beautiful planet. My garden is one of my favourite "happy places" and our Hawthorn is in full bloom at the moment which is very appropriate for May
