1. Preheat the oven to gas 6, 200°C, fan 180°C. Put the cauliflower florets, onion wedges, chicken thighs, tomatoes, spices and oil into a large roasting dish and mix well to combine.
2. Cover with foil and bake in the oven for 45 mins, then remove the foil and continue to bake for 25-30 mins, until the chicken is cooked through with no pink meat showing and the cauliflower is golden and tender.
3. Meanwhile, put all the ingredients for the tahini sauce into the small bowl of a food processor and blitz until smooth.
4. Stir the spinach into the roasting tin and let it wilt from the heat of the chicken and veg. Serve drizzled with the tahini sauce... and enjoy!

Ricetta sfiziosa e leggera
ReplyDeleteThis is exactly the kind of dinner I love because it looks like you have put far more effort into it than you actually have. I have roasted cauliflower before, but pairing it with the spiced chicken, sweet cherry tomatoes and that tahini yoghurt sauce is what really caught my attention. The combination of cumin, coriander, smoked paprika and turmeric would make the whole kitchen smell wonderful while it is cooking, and I especially like the idea of stirring the spinach in at the end rather than making another pan dirty. I would definitely try this with a little extra chilli because I like my chicken with a bit of heat. The late summer flowers at the end were a lovely touch too. I have shared a new post on my blog as well, so I hope you will pop over when you have a moment.
ReplyDeleteThat looks delicious—oh, how I wish I could conjure it up right now so I could just sit down and eat. Thanks for the wonderful recipe! Hugs, Elke
