Fish and vegetable bake, sublime !

This is a fantastic lowcarb meal. The oven proof dishes in the picture are from Sainsbury’s at only £1.99 each. They are approx.7" x 5.5" x 2.5" deep and are very heavy and just the job. For piping hot food serve straight from the oven to the table (don't burn your tongue).
 
Ingredients. Serves two.

250 grams of cod fillet

1 Large courgette
1 large tomato
300 ml of double cream
100 grams of grated cheddar cheese
100 grams of grated Gruyere cheese
4 medium sized mushrooms
2 large garlic gloves
Dried mixed herbs
Salt
Black pepper


Method.

Place a layer of thinly sliced tomato into each baking and serving dish. Followed by a layer of thinly sliced courgette and cheddar cheese. Add a layer of thinly sliced mushrooms. Add finely chopped garlic cloves, salt, pepper and dried mixed herbs. Add the cod cut into small pieces about an inch square. Pour over the double cream until almost covered. Cover with finely grated Gruyere cheese. Cover dish with foil and cook at 200c for twenty minutes. Remove foil and bake for a further 20 minutes. The top should be a lovely golden brown.

  1. Just love fish dishes. A good idea serving it in these oven to table type dishes, it does keep a meal very hot.

  2. Another tasty meal, thanks. Although I would probably not use too much garlic, just a personal thing.

    We eat fish two or three times a week, tastes good and is very good healthy food.

  3. Call us old fashioned but in our house Fridays mean Fish and we're going to have this tonight, thanks for the recipe idea.
