Chicken peppers and leek bake.


Ingredients: Serves two
250 grams diced chicken breast
1 leek chopped
half red pepper chopped
half green pepper chopped
half yellow pepper chopped
1 hand full of button mushrooms chopped
1 teaspoon spoon of dried mixed herbs
Approx 1 pint of chicken gravy stock
Salt and pepper to taste.

Method
Clean, cut and place all ingredients in a casserole dish or earthenware oven proof pot with lid. Pour over the stock and cook at 190c in an electric oven, Gas Mark 5, for approx 75-90 minutes. Just check the chicken has been properly cooked through before serving.

This can be served on it's own or try it with some mashed swede or celeriac,
both are low carb super stars.
This is a nice, tasty meal and if you feel like adding a glass of wine, well the choice is yours.
