Wonderful low carb cabbage soup recipe

We love white cabbage and always have one in the chiller compartment of our fridge. A lovely low carb vegetable and goes with almost any meal. A large white cabbage lasts us for up to three days and for around a £1 is very good value for money. As you can see from the recipe taken from Simply Recipes it is a very versatile vegetable and with a few extra ingredients can be a good meal in itself.


"All you need is some fresh cabbage, onions, canned tomatoes, chicken stock, and a few spices. Of course with so few ingredients the quality of the soup relies on the quality of your ingredients. Homemade chicken stock is the best, and a good quality canned tomatoes makes all the difference."

  1. I think it's worth noting that most commercial soup stock contains MSG and corn syrup solids, and maybe just a pinch of "chicken extract". When it comes to stock, homemade is probably the better option.
