Treat Yourself to Lunch ... Avocado Egg Salad

Why not start the week with a lovely light lunch, the recipe idea is for 12 servings so unless you have family and friends coming round please adjust to suit your needs.




Ingredients

6 avocados - peeled, pitted and cubed
1 teaspoon fresh lemon juice
5 hard boiled/cooked eggs - chopped
½ red onion minced or very finely chopped
½ cup light mayonnaise
1 tablespoon milk
3 hard boiled/cooked eggs - sliced
½ teaspoon paprika

Method

Toss the avocado cubes with lemon juice in a serving bowl
Mix avocado with chopped egg and onion
Whisk together the mayonnaise and milk and add it to the avocado mixture Gently mix these ingredients together
Arrange the remaining egg slices on top of the salad in rows and sprinkle with paprika.

Ready to serve and enjoy, as a light lunch on it’s own or try it with sliced meat. However you serve it hope you enjoy it, the original recipe idea is here

Eggs are so versatile and avocado’s are one of my favourite foods. Look out for the bags of avocado’s that are very often available in supermarkets. The avocado’s may be slightly smaller, or of different sizes, and are usually sold at a cheaper price than the larger avocado’s. Keep an eye open for bargains they are available it might just take a minute or two extra to look for them.

Treat yourself to a salad lunch and dress up your table with a small bunch of flowers …… now that‘s a nice start to the week, hope yours will be a good one.

  1. I'm trying to like avocado's, but still haven't gotten there. I keep trying them every couple of months, thinking (hoping?) that someday my tastes will change

  2. Hi Siobhan, and many thanks for your comment. I think it's great to try out new foods, different recipes.

    I've always liked Avocado's, but many years ago was not too keen on prawns ... but I persevered and now one of my favourite pre dinner starter dishes, light lunch etc is avocado with prawns just add a light covering of dressing e.g mayonnaise, island dressing etc and it just tastes great.

  3. I like avocados, but use it sparingly in salads, max 1/2 avocado for a person due to a high cost. Probably I would use more ingredients for a lunch salad with avocados and eggs by adding raw onions, chopped cooked meat, cucumbers, tomatoes and olives.
    @Slobhan,
    try to add 1/2 of cubed avocado into a tomato salad, rather than eating too much of it at once.
