Tender sweet asparagus with a citrus twist.


Ingredients:

Serves 2
175g asparagus spears
½ lemon, zest and juice
10g unsalted butter
15g Parmesan shavings
Freshly ground black pepper to serve
Method:
1. Trim the asparagus of any woody stalk. Steam the spears for 5-10 minutes or until just tender.
2. Transfer the asparagus to a large bowl and toss with the butter, lemon juice and zest.
3. Pile the spears onto a large serving plate and top with parmesan shavings, then season with freshly ground black pepper before serving.

Some More Tips and Ideas:
1. You could ….marinate asparagus in sesame oil, soy sauce and fresh chilli before, this gives an oriental twist.
2. How about this for a summer barbeque? ….why not spread a little goat’s cheese on a slice of salami and wrap around some asparagus spears, then roast in a hot oven for a perfect accompaniment to a summer BBQ.
3. You’re a vegetarian  …how about replacing the Parmesan for vegetarian Cheddar.
