Tonight's low carb hardship meal it's one tough gig !


Now that spring has arrived salads are back on the menu big time. Tinned red wild salmon from Alaska, celery, organic tomatoes from Guernsey, mushrooms, coleslaw, and apple sultana and walnut salad. This sort of grub turned my health around and our grandchildren love it. How can you or yours go wrong with this food?

  1. That walnut salad looks yummy. I'm not much of a salmon eater, but this looks very good. I really need to eat more fish. It's so good for us. And thank you for the birthday wishes, Jan. It meant a lot to me.

  4. Amazing meal. Almost too pretty to eat. I would have to admire it a while.

    The favorite thing about spring is all the choices we have in our own yard. We have fresh asparagus, all sorts of spring greens with green onions and fresh radishes. I could just graze.

    We enjoyed eating our red wild salmon from Alaska, celery, organic tomatoes from Guernsey, mushrooms, coleslaw, and apple sultana and walnut salad.

    Of course you could always substitute the salmon for some chicken, or cheese if preferred ...

  9. Your meal looks great. I've learned to like fish (never did like it before last year). It took a little time to learn to cook it. Wish I would have been more careful of my diet years ago.

  15. Bit light for me.
    Add a couple of cold hard boiled eggs, replace the apple with an avocado in the salad, top with a decent oil salad dressing, lightly fry the mushrooms in butter, drizzled over them on the plate.
    A bit of double cream over the salmon, with dill, or chives would help as well.
    That's a yummy LCHF salad for me.
