Cucumber Sandwich Anyone?

Paleo cucumber sandwich

As can be confirmed with our grand-daughter, cucumber sandwiches are definitely yummy. She has always been a huge fan of cucumbers and enjoys eating a couple of slices as a snack instead of sweets or crisps.

It wasn't until quite recently we suddenly thought and realised that cucumber could double as a bread roll! Yes, all you need do is scoop out the seeds and stuff with your favourite fillings - similar to the picture above.

But why not let your imagination 'run riot' and invent some delicious cucumber sandwiches for yourself. Beef, ham, cheese, tomatoes - so much to choose from. I wonder what you may fill yours with?

  8. I kid you not, I scoop out the insides and fill them as well as make Nori wrappers out of long thin pieces. So many fun options with produce. What's not to love?
