It's Monday - that's good !

"It's Monday.
Most people hate Mondays. Back to school, back to work, back to losing sleep.I don't particularly enjoy them either, but today is different. Today, I feel like this is the start of a new week. Last week was tough and all, but its all over now... Monday. We all want to curl back up under the covers in a cocoon of blankets. But Monday. All of last week's hardships are through. Gone. Over.

Today is" ... Monday, October 12th 2015.
"There will never be another. Ever.

Monday.
It's only a bad day if you make it one."


Did you know it was National Poetry Day in the UK last Thursday 8th October? I do like reading poems, and there are so many out there which cover all subjects and whether you are young or old, I'm sure there is a poem out there that you like? 

I read the above poem on the 'Hello Poetry' site ... I just substituted today's date. But it is true there will only ever be one Monday 12th October 2015, and I do hope it will be a good one for you. Alas, with all the present troubles that the world is experiencing we must also give thought to those who may not be fortunate to have an enjoyable and peaceful 12.10.15...

But onwards, with the day...

My day has started well with a lovely LCHF breakfast, which looked remarkably like this

a simple herb omelette

and will end with a tasty rustic pork casserole


... can't be a bad Monday, can it ?

I do have a choice of LCHF snacks available should they be needed
hard boiled egg
slices of ham
some cheese
macadamia nuts
a few blueberries
and

Always best to be prepared!

  1. Hey Jan, I like your perspective on Mondays. I always said I can't wait for the weekend until I realised I was wishing my life away by thinking that way. Now I must thank you for that rustic pork casserole recipe, it's delicious and we have made it several times.

    Seems to me people do view Monday's with different perspectives ...
    I think life speeds by all too fast. We must all try to appreciate all the moments in a day, and yes some are more exciting maybe than others - but let's make today a good day!

    So pleased you like the rustic pork casserole, it is a very firm favourite in our house.

    Eggs are such a nutritious food and quick and easy to do. Just served simply with a handful of herbs is great ... even better if you grow your own herbs!

  11. All your meals always look so healthy and delicious!! I don't eat junk food but I eat a lot of pasta, potatoes and bread. Foods people who are careful with their diets are avoiding. Not being diabetic, I don't consider them "unhealthy"!!!!!!

    National Poetry Day in the UK? I do love poetry, and I really enjoy reading the poem when it is rhyming. Your omelet looks delicious. There is a café that I go to sometimes, and they make the best omelets ever - tomatoes, mushrooms, onions, YUMMY!

    We do believe in eating whole fresh food! We also restrict the amount of daily carbs we eat. Our food template is low carb, higher (healthy) fats and moderate protein. By eating this way it keeps Eddie's blood sugar low (as you know he is a Type 2 diabetic) and for me I feel healthier for it, more energy, and good well being.
    As Alzheimer's also runs in my family and is being termed Type 3 diabetes, it makes sense to me to keep consumption of carbs and sugars to a minimum ... but of course it is always up to the individual what he/she chooses to eat.

    I think this is what is good about blogging we can share and exchange views, ideas etc.

    I do my best to provide a wide range of recipe ideas - glad you liked the ones in this article.

    I do enjoy poems,whether they rhyme or not. One of our sons wrote some great poems whilst studying English, just lovely to read.
    I think poetry should be encouraged no matter your age. Words are to be used and enjoyed!

    That cafe you go to, and their omelette does sound yummy - now if I lived close by, we could go one morning ...
