Pork Loin in a Lemon and Dijon creamy sauce, with pickled red onion

Pork loin with pickled red onion

Hasn't the week gone by quickly ... Friday already. For many Friday is often a fish dish but why not consider this pork loin recipe idea. It is quick and easy and the mix of lemon and Dijon mustard in a creamy sauce does make it delicious.

Ingredients
Serves 4
1 red onion
2 tbsp red wine vinegar
1 tbsp caster sugar
1 (British) free-range pork loin (about 400g)
1-2 tbsp olive oil
½ lemon
½ tbsp Dijon mustard
2½ tbsp crème fraîche
Handful fresh parsley

To Accompany (suggestions)

Cauliflower Rice
Steamed seasonal greens

Method
1.Finely slice the onion, then mix with the vinegar and sugar in a glass or ceramic bowl.
2. Cut the pork loin into 2cm thick slices. Heat the oil in a large frying pan over a medium-high heat, then fry the pork slices for 5 minutes, turning, or until they take on some colour.
3. Squeeze the lemon juice over the pork, then add the mustard and crème fraîche. Cook over a medium heat for 2-3 minutes, taste and season.
4. Serve the pork straightaway with the pickled onion and a good scattering of chopped parsley, with a side of seasonal greens if you like.

  2. It looks lovely. We've been eating a fair bit of pork just lately, so much so that the last time I served it, Eleanor said "Not pork again". Oh dear. It's just that it's so reasonably priced and there's plenty of things you can do with it. We're having chicken tonight, Eleanor will be pleased.

    Well both Pork and chicken work well with this creamy sauce ... so you could give it a try.
    I do agree with you Pork is very reasonably priced at the moment, in fact I may just make a pork casserole over the weekend, a little like this one here

  7. Just been catching up with all your posts.
    Those mushrooms look so delicious, they are oozing with loveliness.
    As we have two cats we don't get many birds visiting our garden, we've left food for them before but it just hasn't been touched.
    I totally agree that baked eggs don't sound anywhere near as exotic but I love eggs so I'd be happy to eat them whatever they are called.

    Yes, the Herby stuffed field mushrooms ... quite yummy!
    I can quite understand having two cats doesn't invite birds to the garden, they would obviously be very wary!
    Yes, Shakshouka or Shakshuka, does sound so much more exotic than 'Baked Eggs' I like the different vegetables and spices involved too!

    My week has gone well and gone quickly too, I did spend time with the family midweek which was lovely - looking forward to the weekend, not too sure what the weather will bring, will have to see.

Here in the UK we do not celebrate Thanksgiving as such because we celebrate Harvest Festival, which is traditionally held on the Sunday near or of the Harvest Moon. This is the full Moon that occurs closest to the autumn equinox (22 or 23 September). The celebrations on this day usually include singing hymns, praying, and decorating churches with baskets of fruit and food in the festival known as Harvest Festival, Harvest Home, Harvest Thanksgiving or Harvest Festival of Thanksgiving. Many of our churches and schools encourage people to bring in produce from the garden, the allotment or farm. The food is often distributed among the poor and senior citizens of the local community, or used to raise funds for the church, or charity.

    It is so nice to spend time with family and loved ones and I was fortunate to spend time with mine earlier in the week ...
