Mackerel and Asparagus Tips with a Greek style salad


Yes, I know it's still winter in the Northern Hemisphere, but that doesn't have to mean salads are off the menu plans. One salad we really enjoy is this one - and it's so simple.

Just take some ... Smoked lemon and parsley mackerel, add some asparagus tips then a lovely mix of feta cheese, red peppers, green peppers, cucumber, tomato, black olives, red onion, all drizzled with extra virgin olive oil... sit down and tuck in - it sure tastes good, and is so healthy.

  1. It looks lovely. I must admit that I enjoy a salad during the winter months, it makes a nice change from the more stodgy or filling foods we associate with the colder weather.

  8. Your recipes always look so delicious. If we had fresh mackerel I would try this.

    The weather is cool and down right cold if you stay out too long. It is supposed to be some warmer tomorrow. It dips to below freezing at night. Not cold for some but it is for me.

    I like balance in every thing. Balance in Nature is essential for it's survival.

  14. Sometimes the simplest meals appeal to me most of all. As for salads and winter, I had one tonight, and it was the coldest day of the winter, so far :)

  15. I do like mackerel but it's just me that does and I don't buy it often. My sister said the mackerel in Aldi is very nice.

  20. Hello Lisa ... must admit I haven't tried Aldi yet for mackerel, but I'm sure it's delicious, and their prices are usually very good too.
    I think just a simple cheese or ham salad can be very tasty too!

  21. Hi 'Old Runningfox' and welcome. I am so pleased you found a recipe that you like - salads are great at any time of year - we enjoyed some fresh asparagus with this, blanched in boiling salted water for 1½-2 mins until just tender.
