Creamy Broccoli and Leek Soup : A Low Carb Winter Winner


In many parts temperatures are still quite cool, so soups can be just great - including this creamy broccoli with leek one. It is " a super-easy low-carb soup that can be varied infinitely. It can be had as an entree, lunch or a light dinner with delicious sides like cheese chips or our egg muffins."

Ingredients:
4 servings

1 big leek
10 oz. (300 g) broccoli
8 oz. (225 g) cream cheese
3 cups (750 ml) water
3 oz. (85 g) butter or olive oil
1 handful fresh basil
½ garlic clove
Salt and pepper

  1. We got up to a smattering of snow this morning so soup is just the thing to warm us up at lunch time. I've never tried broccoli and leek soup but it looks lovely.

  2. I just want to add that it is better to sautee broccoly for soup 20 minutes first with added salt and 1/2 tsp of baking soda- it makes mild, nutty tasting broccoly.

  8. Sure, Jan, leek is grate with broccoly. My remark is only about preparing broccoly for any soup. I believe in cooking vegetables till they are not crunchy.

    Soups are so good in the colder months ...
    If you do make these cheese thins be sure to use grease-proof ( parchment ) paper.

    My dear mum always used to cook her vegetables well too ... and use the water they had cooked in to make her gravy / stock or soup ...
    I think the way Anne has suggested this recipe the vegetables would be more crunchy, but that is the joy of recipe's, they can always be amended to suit. I think it is always good to exchange views, ideas, tips ...

  13. My favorite soup is cream of broccoli! I've never tried cream cheese in it but imagine that would give a lovely creamy texture to it. I'm making cream of asparagus soup for supper!

    Cream of Asparagus sounds good to me ... we also enjoy a creamy mushroom soup.

  15. I also want to add that soups are wonderful way to use a bone broth. I don't like the taste of it, but my frugal upbringing prevents me from discarding any bones . So, I put bones in a pressure-cooker first, than use the broth for soup with something what tastes strong , and broccoly is quite good in producing a dominant taste. It is a good idea to cook soups in large quantities and to keep what is left as a base for a quick meal. I am still in Moscow, but my family eat various soups I put in a freezer in small containers.

    Yes bone broths are perhaps not to all our tastes but they can be great for using up any bones, vegetables etc. Just pile them into the broth. I remember our friend Tess talking about bone broth a while ago, which prompted me to put this post on the blog

    I think it can also help to freeze soups for use at a later date, sometimes it is almost easier to make a large batch and freeze some!
