Lamb Roast Filled With Herbs and Cream Cheese


This dish is just lovely (and delicious) to enjoy with family and friends, and is ideal for any Sunday or family gathering.

Ingredients:
8 servings

4 lbs (2 kg) lamb roast
Salt and pepper
4 oz. (100 g) cream cheese
1 handful fresh herbs – parsley, rosemary, thyme, basil or oregano
3 – 4 garlic cloves
½ lemon, the zest
2 oz. (50 g) butter
Cooking string

Herbs ... can be so wonderful to use, these "fragrant plants whose leaves (and sometimes stalks) are used in cooking to add flavour to dishes. Different cuisines rely on different varieties of herb, depending on which plants grow native or are cultivated in that country:
For example, basil is synonymous with Italian food, while coriander is widely used in Indian and South-east Asian dishes. The leaves of many herbs can be dried and used as a substitute for fresh herbs, but the flavours will not usually be as pronounced. The seeds of some herbs, such as coriander, can be dried, ground and used as spices.





Do you like using herbs in your cooking? Fresh are lovely but it's always good to keep some dried ones handy ... just in case!

  4. i agree about herbs, dried are especially good for any crock pot cooking. i have some fresh herbs growing in the house, mostly just because i love to watch things grow. that lamb sounds good, i have never cooked lamb!!!!

    Annie - yes it is nice to use herbs when cooking

    Margaret - if you can tolerate a few herbs I think they can certainly add to the taste, but obviously you must do/use what suits you best

    Tessa - this is a very tasty meal and I agree that Turnip Gratin looks heavenly doesn't it

    Debbie - I think it's great to grow fresh herbs, if you can't then shop bought ones or dried can add to recipes.

    Eileen - looking at yours and other comments, I rather think lamb may be more of a 'British'/ 'European' meal ... I could be wrong! Glad you like fresh herbs.

    Karen - it can be more difficult if your husband doesn't like lamb, but should you have the opportunity to eat a lamb dish (soon) I hope you enjoy it.
