Berry Sponge Cakes : The LCHF Way


Here are some fresh low carb. fruits, and their carb count.
Strawberries 6 grams. Blackberries 5.1 grams. Raspberries 4.6 grams. per 100 grams.

It's often nice to enjoy some fresh low carb fruits with double (heavy) cream for a dessert. 

However, it can be so handy to keep a supply of low carb fruit in the freezer, or indeed in a can, and bring them out when you may want to make a low carb sponge like either of these ...


Black Forest Gateau
Ingredients:
100g ground almonds
1 teaspoon baking powder
2 large eggs
1 tablespoon of melted butter
2 tablespoons of double cream
2 tablespoons of cocoa powder
100 grams of pitted black cherries

Flourless Berry Sponge
Ingredients
110g / 4 oz / 1 stick butter melted
½ cup coconut flour
3 -5 tbs granulated stevia, or sweetener of choice, to taste
2 tsp vanilla
1 tsp baking powder
8 eggs
1 cup frozen berries

  2. Oh my this does sound delicious, I have been having my berries with ice cream that I have found that just has the cream, sugar and vanilla beans in it, this would be great for a change :)

    Blackberries don't grow here where I live, but we can pick wild raspberries, blueberries and lingonberries from the woods.
