Raspberry Mousse


This lovely LCHF Raspberry Mousse recipe is from Swedish chef Birgitta Höglund, pictured here, who is featured on Diet Doctor site and also has a popular low carb/Paleo recipe blog



Raspberry Mousse
Makes 6–8 servings
2 sheets of gelatin (or about 1 1/2 teaspoons powdered gelatin)
1 1/4 cups (300 ml) raspberries
2 large eggs
sweetener equivalent to 1 tablespoon honey
3/4 cup + 2 tablespoons (200 ml) heavy (double) cream
1 teaspoon lemon juice

    The title on the book was changed just before printing, from the Swedish title LCHF for seniors to LCHF för Healthy Aging, just to show that my recipes is a good choice for everyone.
