Cherry Cupcakes : Low Carb Cooking


Well as yesterday was National Cherry Day, I'm continuing the cherry theme. This recipe suggestion comes from Ewelina - it's her lovely Low Carb Cherry Cupcake recipe. She uses one of her favourite low carb cupcake recipes, but this time uses 'sour cherries which are great for baking.' Now if you cannot get 'fresh sour cherries you can use frozen ones' ...and even the 'black-forest fruit mix available in most, big supermarkets'.

To make eight large cupcakes, which have a carb count per cake of 4g, here is what you need:
Ingredients (make about 8 large cupcakes):
180g ground almond (sieved)
85g butter, softened
240 g erythritol (ground in a coffee grinder)
5 eggs, separated
2 tsp. baking powder
1 tsp. vanilla extract
About 24 (frozen) cherries
Pinch of cream of tartar

Frosting:
180g philadelphia cheese
60g butter
2 tbsp. erythritol

Cherry sauce:
About 50g (frozen) cherries
1 tbsp erythritol
Pinch of xantam gum

  3. I would suggest reading the labels of the cream cheese. Philadelphia has stabilisers (locust bean gum) in the ingredients while Tesco's own is just cream cheese and much lower in carbs.
    The recipe looks great!

  8. Scored some good cherries this past week, again. Love those things. I also just changed my banner back to cherries. So yummy! But mine are made with carbs. Though these days, it's very easy to drop gluten, dairy, carbs, sugar, whatever you don't want to eat.

    Love that.
