Tomato and mint salad : A lovely summer side dish


If you want a quick, easy and great tasting side dish, how about this one! It's full of fresh summer flavours ... tomatoes, mint and red onion ... which I'm sure will be enjoyed!

Ingredients:
Serves Four as a side dish
400 g tomatoes on the vine
28 g fresh mint, leaves picked and finely chopped
0.5 red onion, finely sliced
2 tbsp extra virgin olive oil
1 tbsp white wine vinegar

Method:
1. In a medium bowl, toss together the tomatoes, mint and onion. In a separate, smaller bowl, whisk together the olive oil and vinegar, and season with freshly ground black pepper.
2. Drizzle the dressing over the salad and serve with grilled fish or meat.

... you see I said it was quick and easy!

Each serving provides:
4.7g carbohydrate 1.7g fibre 1.2g protein 5.5g fat
