All you need are Eggs ... and a little imagination !



Eggs, so versatile and so nutritious, and there are many ways of using them in recipe ideas. This 'Eggs On The Go' recipe suggestion from Anne Aobadia at Diet Doctor is a different, but simple way of enjoying them! So handy to bring when you're out and about or serve as a snack, breakfast or on a buffet...

Ingredients
allows for six servings ... (2 eggs each)
6 carbs per serving

12 eggs
salt and pepper to taste
optional filling
When it comes to the filling, your imagination is the only limit. If you want to increase the fat ratio you can top with shredded/grated cheese or add some mayonnaise before baking

If you serve these at a buffet they look so good with different coloured cupcake liners - great tasting and very nutritious. You can read more about the nutrients in eggs here
