Easy Peasy Cheesy Frittata : Great For a Light Lunch


This 'easy peasy' cheesy frittata is just great for a simple, light lunch ... and I find can be enjoyed by adults and children alike. Just nice simply served with a salad, a green one as seen in the picture above, or perhaps some tomatoes and cucumber too. Really it's down to you to choose your favourite side salad ...

  
Ingredients:
Serves four
2 spring onions (scallions), ends trimmed off
4 tablespoons of frozen peas, defrosted
1 courgette (zucchini), halved with the ends cut off
2 slices of ham
100g feta cheese
4 eggs

Method
1. Turn the oven on to 180C/ 160C fan/gas 4. 
2. Snip or cut up the spring onions and put them in a bowl. Add the peas to the bowl.
3. Grate the courgette using your rotary grater, one half at a time, then add it to the bowl.
4. Cut the ham into pieces with your scissors, if you do this over the bowl it will fall straight in.
5. Break the feta into the bowl by crumbling it with your hands.
6. Crack the eggs into a bowl and, if any bits of shell fall in, scoop them out with a spoon. Whisk the eggs until the yolks are mixed into the white.
7. Pour the eggs into the other bowl and stir. Brush a round ovenproof dish, about 16cm across, with oil. Tip everything into the dish.
8. Place the dish in the oven for 30 minutes or until the egg is set.
9. Serve with salad

This recipe is so easy and designed that a child, age guide 5 - 9 years, can help out ... something the grand-children love to do! 

Tip - Equipment:
If a child should help, you may find that children's scissors with metal blades or a small knife, depending on your child's age will be helpful and a rotary grater is kinder to little knuckles.

If children are helping in the kitchen always be 'safe aware', and keep a careful watch on them.
