Low Carb Berries : Fruit and Almond Clafoutis

At this time of year, for a tasty dessert, I sometimes take some low carb fruits.
Strawberries 6 grams. Blackberries 5.1 grams. Raspberries 4.6 grams. of carbs per 100 grams.
Place a few in a bowl and enjoy them with some double (heavy) cream


Or I may be a little more adventurous
and make one of our low carb favourites
Lowcarb fruit & almond clafoutis

Ingredients:
50 grams of ground almonds
1 tablespoon of plain flour
250ml of double cream
2 egg yolks
100 grams of raspberries
100 grams of blueberries

Serves 4-6
Mix the almond flour, plain flour, egg yolks and cream in a bowl or pyrex jug.
Pour into a non stick baking dish 8" x 1.5" and place the fruit.
Place into a pre heated oven at 190c and cook for twenty-five minutes.
Remove, and cover with foil, then cook for a further twenty minutes.
Allow to stand for 1 hour.

This gorgeous French pudding is sublime. Lowcarb and so easy to make.
Serve with double cream.

  10. I adore those fruits, so tasty but although I prefer blackberries cooked, I prefer the other two raw. Funny that something so similar provokes different reactions!x
