Warm courgette and aubergine salad : Low carb


To some they are courgettes and aubergines, while others know them as zucchini and eggplants. Whatever you may call them they are two of our favourite vegetables, and are low in carbs. When mixed in a warm salad with added ingredients such as you see in the ingredient list below, I think it makes this dish a winner. What do you think?

Ingredients:
Serves Four
2 aubergines, sliced
2 courgettes, sliced
175g prosciutto, torn into pieces
1 red chilli, sliced
1 clove of garlic, minced
1 red onion, sliced
20g olive oil
½ tsp thyme
½ tsp oregano
50g (2oz) whole almonds
generous pinch sea salt
freshly ground pepper
watercress, to garnish
mustard, to garnish


Method:

Pre-heat the oven to 180°C. / Gas Mark 4

In a roasting tin, place the aubergine/egg plant, oil, garlic and red onion and bake in the oven for 15 minutes.

Remove from the oven and add the courgettes/zucchini, herbs and the almonds and roast for a further 15 minutes.
Cool and arrange on four plates with the almonds, prosciutto and cress on top. 

As an optional topping, sprinkle cubes of halloumi cheese.

  2. This sounds delicious. Eggplant is one of my all time favorite vegetables. I am going to copy the recipe so I can give this a try. We always have an abundance of both of these veggies in our garden in the summer months for us. Thank you so much for sharing!
