Stuffed Courgette / Zucchini Boats : Smoked Ham or Curried Chicken

If you grow your own vegetables you may well have been drowning in a sea of courgettes recently. What a fantastic vegetable! One plant can yield kilos and kilos for months. For instance you may have a small garden with four plants and after freezing them down manage to eat some courgettes/zucchini every week throughout the year until the following summer! Wow!

Even if you don't grow your own you may find them at reasonable/low prices at your local farmers market, or supermarket, so you can get lots in now and cook them for later. The only problem with this bounty of courgettes is not getting bored of them! So, you may already have a favourite recipe but how about these two suggestions, which one would you prefer? You may try them both!

  6. They are such prolific plants. I do my best not to let them grow big enough to stuff (prefer them young and tender) but some inevitably escape...

  7. These look wonderful! I'd have to modify them a bit to make them vegetarian, but not very much. Thank you!
