I'm sure your family will enjoy this low carb version of Italian meatballs - they make a wonderful Friday night meal - in fact they could be enjoyed any day!
Ingredients

1 lb / 450 g ground (minced) beef
2 oz. / 50 g grated parmesan cheese
1 egg
1 tablespoon dried oregano
½ teaspoon onion powder
1 teaspoon salt
½ teaspoon ground black pepper
3 tablespoons olive oil
14 oz. / 400 g canned whole tomatoes
2 tablespoons finely chopped fresh parsley
7 oz. / 200 g fresh spinach
2 oz. / 50 g butter
5 oz. / 150 g fresh mozzarella cheese
salt and pepper
2 oz. / 50 g grated parmesan cheese

There are a lot of greens used in this type of dish. I like spinach because it has a nice light flavor.
ReplyDeleteJan, how delicious! And I only recently decided to make some meatballs without any breadcrumbs (or oats, etc). I don't need to tell *you* - they turned out great. You don't have to add simple carbs to meatballs! Now you've got me craving Italian meatballs.

Learning all the time. It had never occurred to me that meatballs could be anything BUT lowcarb.
