Chocolate Pound Low Carb Cake : Made with Coconut Flour.

Ingredients:
Serves 12
2 net carbs per serving.

Dry Ingredients
3/4 cups (70 g) (Bob's Red Mill) Coconut Flour
1/2 cup (115 g) Sukrin 1 (or Swerve Granulated)
1/4 cup (25 g) unsweetened cocoa powder (sift before measuring)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon instant coffee or espresso, optional
1/2 teaspoon salt
1/4 teaspoon xanthan gum
Wet Ingredients
6 large eggs
1/2 teaspoon vanilla
1/2 teaspoon stevia glycerite or more to taste
2 teaspoons vinegar
Melt together
4 ounces (1 stick/ 113 g) salted butter, melted (or coconut milk)
1 ounce (28 g) unsweetened baking chocolate, chopped
Optional Topping
2 tablespoons (Lily's) Sugar-Free Chocolate Chips

  2. Can I leave out the xanthum gum? I avoid all gums if I can. I don't know if I am intolerant or allergic. My allergist will figure that out.

    "If you are allergic to xanthan gum, is there an alterative? The answer is yes. The best bet for those allergic to Xanthan gum, or simply want to do away with it, is to make your own food products. If you have a recipe calling for xanthan gum, you can usually substitute it out. The best alternatives to use would be: psyllium fiber, chia seeds, glucomannan, ground flax seeds, gelatin, and agar agar. These products can give a similar thickening effect.
    Xanthan gum has many uses and is relatively safe to consume. However, if you have a food allergy to corn, wheat, or soy there are alternatives you can use. Be mindful of the ingredients of your products the next time you are at the grocery store. You would be surprised as to how many products contain xanthan gum."
