Feta Cheese Stuffed Bell Peppers : Vegetarian


A super tasty vegetarian dinner that you can prepare in no time. Green bell peppers stuffed with a creamy feta cheese filling, with a touch of mint, olives and smooth tanginess. Yum! Hearty and healthy comfort food at its best, baked to perfection...

Ingredients
Serves Two
(11g carbs per serving)
2 green bell peppers
11 oz. / 300g feta cheese
10 green olives pitted and chopped
2 eggs
½ tablespoon dried mint
1 teaspoon hot sauce
Serving
1 oz. / 30g leafy greens
2 tablespoons olive oil
1 pinch sea salt

  14. Capsicum (and carrot) are vegetables I only like raw. I do love fetta though, and suspect I would enjoy this dish even without cooking.

  15. I'm actually making studded peppers this evening. I usually use red peppers as I find them easier to digest than green. I like the cheesy filling of these stuffed peppers and will have to try this recipe soon. Thanks, Jan

  19. Hmmm, this sounds like a great alternative! Usually we have it filled with rice, mushrooms, more pepper and gouda. Oh, and parsley, of course :-)

  23. I often had stuffed "capsicums" (as we call them down this way) on my restaurants menus for those who were vegetarians...and for those who weren't...who just liked them, anyway!!
