    Hello Dora
    I hadn't heard of Hoppin John before so had to look it up :)
    I found out it is a classic Southern dish to celebrate New Year's. The black-eyed peas are for good fortune in the coming year.

    I think for a lower carb version I could substitute the long grain rice with cauliflower rice …
