Jalapeño Popper Frittata : Low Carb


Frittata may be one of the easiest keto / low carb meals you will ever make. There are so many variations and flavour options, indeed you may already have your own favourite(s). This recipe combines frittata with another keto favourite … jalapeño poppers. Just add a side salad for a delicious low-carb meal!

Ingredients:
Serves Six
Frittata
3 fresh jalapeños
175 g bacon, chopped
2 garlic cloves, minced
110 g cream cheese, chilled and cut into small cubes
7 large eggs
75 ml heavy (double) whipping cream
¾ tsp salt
½ tsp ground black pepper
175 ml (75 g) cheddar cheese, shredded
Side salad
1 large head of Romaine lettuce, washed and chopped

1 yellow bell pepper or red bell pepper 
1 medium cucumber, chopped
Per Serving
Fat 32g Protein 17g Carbs 7g

    I'm not sure about the jalapenos though...I tasted one once and my mouth burned for 24 hours! Lol

    Many thanks for your comment and question.
    This is a tasty recipe, some people find it a little too hot and they reduce the number of jalapeños.
    With regard to eggs - seven (medium size) eggs seems to work well (on a serving for six people) but depending on the size of your eggs you could try reducing it to six …

    This frittata makes a great low carb meal when served with the salad.
