Cheesy Cake Bars / Biscuits --- LCHF : Keto

This is a recipe idea I first saw on Ewelina's blog and thought it a great idea. She calls them Cheese Biscuits but they are quite spongy on the inside - similar to a muffin - so perhaps I'd call them 'Cheesy Cake Bars'. They are quite high in fat so if you eat one or two (maximum) they are very satiating and you will feel full for hours ...

There is also another benefit, bake a big batch and they can make a super fast breakfast on the go. You grab one from the fridge and enjoy with your morning cup of tea or coffee … and they taste nice eaten warm or cold.

Ingredients:
150g/5 ounces ground almond
100g/3.5 ounces cream cheese
50g/2ounces cheddar cheese, grated
50g/2ounces butter, melted
1 egg
1 heaped tsp baking powder
½ tsp baking soda

Nutritional values:
1 Biscuit
Carbs 1.2g
Protein 6g
Fat 18g

Instructions:
can be found on Ewelina's blog here

I wonder will you prefer yours with tea or coffee?

I've just spotted this lovely recipe idea from Libby at Ditch The Carbs blog.
She uses coconut flour in her recipe for 'Coconut Flour Mini Cheese Loaves' they are low carb and work out at 1.3g net carbs per loaf.

  21. Looks like something my Hubby would like to try as well as myself. He's a big fan of my blueberry muffins and cinnamon muffins too. When I make this sort of thing I have to freeze them right away or I'll eat way too many in a day. It does save money because just one muffin bought online costs $2.49 each. I can bake a batch of 8 for about $5.00 - 6.00 Thanks for the great recipe.
