In the meantime after a lovely day it was time to enjoy a favourite meal. Would it be a Roast Pork dinner or a Pork Casserole Rustic Style, both are tasty! We chose the casserole, always so delicious.
This recipe/meal is in my top five favourite pork casserole recipes.
Ingredients
Serves two
2/3 pork chops (optional remove fat) and cut into small pieces
2 large leeks chopped
a hand-full of button mushrooms
1 large sliced carrot
1 table spoon of dried mixed herbs
Approx. 1 pint of gravy stock
Salt and pepper to taste.
Method
Clean, cut and place all ingredients in a casserole dish or earthenware oven proof pot with lid.
Pour over the stock and cook at 190º C /375º F / Gas Mark 5 for 90 minutes
( I usually stir the casserole every 30 minutes or so ... )
Check food is cooked through, then serve and enjoy

Yes I'm waiting to hear what further restrictions we'll have to deal with I hope they don't close cafes in my area a cappuccino is a simple but necessary pleasure in these difficult times.

ReplyDeleteI am envious of your cooler weather and autumn leaves. Here it is still hot and the leaves just turn brown. I make a variation of your pork casserole by including not only pork, but also beef and if I can find it, lamb.

ReplyDeleteWarm soups and stews are perfect this time of the year, especially when fresh vegetables are being harvested. It has remained warm during the day here but getting colder at night. It won't be long before we have snow again.

ReplyDeleteI sure have been enjoying our Autumn weather, we just got back from a little trip to see family for the first time in a year and did a little stop at a State park on our way home to walk on some paths and drive through the pretty Autumn trees!
