Japanese-style salmon and avocado salad : A low carb recipe

Doesn't this rainbow coloured salad look good, it tastes good too 😋 Flaky salmon tossed with creamy avocado, crunchy veggies and finished off with a drizzle of punchy ginger and soy dressing. I hope you may try it.


Ingredients
Serves Four
1 tbsp oil
500g boneless half salmon side, skin-on
2 avocados, cut into chunks
240g radishes, topped and quartered
bunch spring onions (scallions), sliced
85g watercress
2 tsp sesame seeds, toasted
For the dressing
25g piece fresh ginger, finely grated
5 tbsp lemon juice
1½ tbsp soy sauce
1½ tbsp sesame oil
Method
1. Heat the oil in a non-stick frying pan. Add the salmon, skin-side down, and cook for 4-5 mins. Turn and cook for a further 3 mins, or until just cooked through. Transfer to a plate or board and remove and discard the skin. Flake the fish into large chunks.
2. Meanwhile, combine the dressing ingredients in a jug. Set aside.
3. In a large bowl, toss the avocado, radish, spring onion and watercress.
4. Divide the salad mixture and flaked salmon between 4 bowls. Drizzle over the dressing and top with a sprinkling of toasted sesame seeds.

  8. I can't even find avocados at my grocery stores. They are not available, and if they are found in the states, the price is exorbitant. I used to eat a full one every two days and I miss them. This looks delicious, Jan. Sorry I haven't visited for a couple of days. I thought my computer died, but it's fixed now.

  16. I am not a big seafood eater. I like fish from time to time but I like it fried, oops, same with my shrimp. But.....I have seen some friends that cook fish in the air fryer...thinking of trying that.

  20. I've a couple of salmon fillets in my freezer, and a few avocados ripening next to the bananas in my fruit bowl. The avos are off the tree next to my humble abode. There are about 10 avocado trees on this property.

    In case you weren't already aware...putting avos with bananas assist in speeding up their ripening process. An old trick I learned when I had my fruit, vegetable and health food store back in the early 80s.
