Red Roasted Carrots ... delicious and so right in cooler weather!


Red Roasted Carrots
Now these are simply delicious. Although carrots do have more carbs. than vegetables like aubergine/eggplant, courgette/zucchini, broccoli ... so if you are diabetic and may have a concern with blood sugar numbers, then test is best i.e., do use your meter.

Red Roasted Carrots
Combine a couple pinches (or a half teaspoon each) of cinnamon, paprika, chili powder, garlic powder and sea salt.
Mix spices well in a bowl (or bag!) with 5 or 6 diagonally (oval) cut carrots plus 1TBS olive oil and 1tsp sesame oil.
Roast at 400 for 20 minutes on a cookie sheet until the edges are crispy brown. Enjoy warm!

Oh yum, that does look good. For the first time in ages we have no carrots. I don't usually run out of them as we are always eating them.

We would regularly have roasted carrots with our Sunday dinner when I was a kid, but not like this. They look and sound tasty.

Jan, the timing of this recipe is great as I just bought a bag of nice, larger carrots last week. While I know that the sugar content of this veggie is higher than others, moderation will be applied😋

I always roast my carrots because it really brings out their delicious taste. I sometimes make them a bit spicy and sometimes I add a pinch of cinnamon and nutmeg. I haven't tried this recipe though. Thanks for sharing. And have a super new week to you Jan.

I often roast carrots with fresh garden herbs, but this looks like a delicious alternative.
