Serves Four
2tbsp olive oil
450/455g pork sausages (or sausages of your choice)
1 sweet potato (about 225g/8oz) peeled and thinly sliced
1 red onion, thinly sliced
50g baby spinach leaves, roughly sliced
8 large eggs
1tbsp snipped chives, plus extra to garnish
green salad, to serve
450/455g pork sausages (or sausages of your choice)
1 sweet potato (about 225g/8oz) peeled and thinly sliced
1 red onion, thinly sliced
50g baby spinach leaves, roughly sliced
8 large eggs
1tbsp snipped chives, plus extra to garnish
green salad, to serve
Method
1. Heat 1 tablespoon of the oil in a large nonstick frying pan with a heatproof handle. Add the sausages (no need to prick them) and fry over a medium heat for 10-12 minutes, turning occasionally until evenly browned. Remove, drain on kitchen paper and allow to cool slightly before cutting each one into 5 diagonal slices.2. Wipe out the pan, then pour in the remaining 1 tablespoon of oil and heat up. Tip in the the sweet potato and red onion and stir fry for 10-12 minutes until softened and turning golden. Stir in the spinach for a few seconds (just enough to wilt) then return the sausages to the pan. Preheat the grill to high.
3. Beat the eggs, season, pour them into the pan, then scatter over with the snipped chives. Cook over a medium heat for about 5 minutes, or until the edges begin to set. Place the pan under the grill for a few more minutes until the top begins to puff up and is lightly browned. Scatter over the remaining snipped chives, and serve with a green salad.
The carbohydrate content in sweet potatoes, (and white potatoes), will result in a blood sugar impact in any serving size and many diabetics choose not to eat them. However, sweet potatoes are naturally more nutrient-dense; so if you do choose to eat them they could be the better option between the two!
All the best Jan

Gracias por la receta. Te mando un beso.
...Jan, this looks tempting.
I was just thinking that the frittata would be tasty even if I left the sausage out!!
That looks really good. I bought some maple flavored veggie 'sausages' but haven't had them yet. I love sweet potatoes, too. Happy January, Jan. Diana
What a delicious recipe! Whether with or without meat, it's something I love!
Have a lovely Saturday, hugs, Elke
ps: I bought a sourdough bread yesterday, it tastes delicious and my sweetheart likes it too. I'm so glad to finally have a bread for him that's healthy and tastes great on top. Thanks for the tip!
That's a lovely combination Jan. Thank you, I will enjoy this :) All the best, Denise xo
Looks good Jan.
What a coincidence - just bought sweet potatoes.
God bless.
Looks yummy and makes me wish for the turkey Italian sausages we used to be able to get in the US--the hot variety would be excellent in this dish!
La frittata è un piatto molto versatile che si sposa davvero com tanti abbinamenti.
Quelli di farli con la salsiccia e le patate mi sembra molto valida come idea.
Looks yummy. I like sweet potato.
LOL, I am German - and old-fashioned, Sausages go on the coal BBQ here ;-) Thank you for the alternative, Jan!
Hearty and delicious!
