This Berry Mousse Dessert is Crunchy and low carb/keto !

If you may be looking for a simple low carb/keto dessert, how about this one? A crunchy berry mousse, it's delightful and one that the whole family (and friends) can sit down and enjoy. The combination of berries, cream and pecan nuts with a touch of citrus ... delicious.

Ingredients
Serves Four
240 ml double (heavy) whipping cream
45 g fresh mixed berries*
25 g chopped pecan nuts
¼ lemon the zest
1⁄8 teaspoon vanilla extract
Instructions
1. Pour the cream into a bowl and whip with a hand mixer until soft peaks form.
Add the lemon zest and vanilla towards the end.
2. Add berries and nuts to the whipped cream and stir thoroughly.
3. Cover with plastic wrap and let sit in the refrigerator for three or more hours for a firm mousse. You can also enjoy the dessert immediately if you don't mind a less firm consistency.
Tip*
A blend of raspberries and blueberries works well, but what do you like? Try any combination — strawberries, cherries, blackberries, or red and black currants.

  13. That would be so delicious. I'm not sure I'd get as far as making it, though, as I'd be eating the ingredients as I went along.
