"I'm on insulin so can adjust that to the carbs I eat. I know I could not eat a low carb diet I don't know how people eat the same things every day eg, salad veg and fruit. I'm not a great lover of any of that. I tried it once had salad twice in 1 week and I couldn't eat it again. I like what I like and that's it"
Can’t argue with that. As non low carb success stories go that’s as good as gets !!

I read that thread and noticed that all the NON low carb successes were actually eating less than 120g or carbs a day - which is Low carb - isnt it?????????
120 carbs was frowned upon once upon a time on DCUK and you could not be a low carber using that amount. Ask Edie, he will tell you.

So will my meter readings tell me how low carb a threshold is safe for me, or is there a figure I should try to aim for? I am Type 2 diet and metformin.

Your meter is your friend Claire and is the only way to determine a safe level of carbs, a good site for all you need to know about testing is Jenny Ruhl's blood sugar 101.http://www.phlaunt.com/diabetes/
