Chocolate and Peanut Squares : Low Carb Treat


This recipe suggestion from Diet Doctor site … There are many who would say "Wow… Just wow. Chocolate and peanut butter are meant for each another." In this recipe "they’re presented in perfect harmony with some toasted nuts on top for crunchiness!"

Ingredients
12 servings 
4g carbs per serving
3½ oz. (100g) dark chocolate with a minimum of 80% cocoa solids
4 tbsp butter or coconut oil
1 pinch salt
¼ cup (60ml) peanut butter
½ tsp vanilla extract
1 tsp (3g) liquorice powder or ground cinnamon or ground cardamom (green)

1½ oz. (40g) salted peanuts, finely chopped or hazelnuts
Tip
Almond or hazelnut butter work, too. And try different toppings: toasted (and coarsely chopped) almonds or hazelnuts, roasted sesame seeds with unsweetened coconut flakes, or even tahini!

It contains a decent amount of soluble fibre and is loaded with minerals.

A 100 gram bar of dark chocolate with 70-85% cocoa contains:
11 grams of fibre.
67% of the RDA for Iron.
58% of the RDA for Magnesium.
89% of the RDA for Copper.
98% of the RDA for Manganese.
It also has plenty of potassium, phosphorus, zinc and selenium."

  9. Ooh, it does sound good. The highest % dark chocolate I've found is 95% in Lidl. It is quite bitter and is an acquired taste but I've just pushed on through. One square is definitely enough though, so that's a result in itself! Take care, Sue xx
