Thursday Three : Low Carb Recipe Suggestions (1)

Here we are with another 'Thursday Three' of lower carb recipe suggestions.
There's definitely a chocolate theme going here 😊
I hope you enjoy these suggestions.

Christmas Chocolate Log With Blueberries
A low carb chocolate log, with added blueberries.
Could be perfect for an alternative Christmas (or New Year) dessert.


Ingredients
1 cup Almond flour
3 Eggs
50g Butter
¼ cup Psyllium husk
½ cup Coconut cream
¼ cup Cocoa
1 tbsp. Natvia (or sweetener of your choice)
1 tbsp. Vanilla essence
Filling
250g cream cheese
50g Butter - melted
1 tbsp. Natvia
1 tbsp. Vanilla essence
½ cup blueberries or sliced strawberries

Chocolate Ganache Tart
Crispy chocolate tart shell is wrapped around a luscious chocolate filling.
Decadent and delicious, this dairy-free dessert will be a winner for vegans and non-vegans alike.


Ingredients
Will make 16 slices/servings
3g net carbs per serving
Crust
1½ cups (175g) almond flour
½ cup (50g) cocoa powder
1⁄3 cup (50g) erythritol
6 tbsp coconut oil, melted
Filling
8 oz. (225g) dark dairy-free sugar-free baking chocolate
6 oz. (175g) coconut cream
Tips
This tart is very rich, so only a small slice is sufficient.
Optional - decorate with fresh raspberries.

Coconut and Chocolate Cake
A slice/piece of cake with 5g of carbs sounds great and tastes delicious too.
It’s easy to make and if you are a fan of coconut I am sure you will like this cake.


Ingredients
make 12 slices/pieces
For coconut base
6 egg whites
150g desiccated coconut
Equivalent of 200g sugar (e.g. Splenda)
1 tsp. baking powder
For chocolate cream
250g mascarpone cheese
3 tbsp. cocoa
Equivalent of 3 tbsp. sugar
2 tbsp. Greek yogurt or cream
