I think it's tomato soup time... with the addition of onions, carrot and celery!

With September flying by, and the mornings feeling a little chillier, I thought it's definitely time for tomato soup. This is a fresh and simple tomato soup recipe with the welcome addition of onions, carrot and celery. If you should grow your own tomatoes you may like to keep this recipe in mind because it is perfect for using up a glut of home-grown tomatoes...


Ingredients
Serves Four
2 onions, peeled and chopped
1 carrot, peeled and diced finely
1 clove garlic, peeled and crushed
1 stick celery, finely chopped
2 tbsp. olive oil
450g/1lb fresh ripe tomatoes, halved
1 litre/1¾ pints vegetable stock
1 tsp sugar (optional)
salt and freshly ground black pepper
handful fresh basil, shredded (optional, but it really adds to the taste)

Method
1. Heat the oil in a large saucepan and add the onions, carrot and celery and garlic. Cover and cook gently for 10 minutes until soft.
2. Add the sugar (optional), salt, pepper and tomatoes. Stir and cook for another 5 minutes.
3. Add the stock, bring to the boil and simmer for 10 minutes. Liquidise until smooth.
4. If using the basil, stir in at the end.

I just made tomato soup, one of my favorites. My recipe is similar, but the veggies are roasted in the oven first. Yum!

I just put a meal of homemade tomato soup into the freezer for another day, to use up tomatoes and onions that I grew. I roasted the vegetables in the oven with garlic and basil, and will add stock and blend the mixture when I cook it into soup. A perfect autumn meal.

This sounds and looks so delicious. I haven't had soup in a long while. I guess it's because it's really hot in Hawaii right now. I'll have to make some in another month or so.

I wanted to buy eggs from the farmer's wife, but she didn't have any. She offered me a chicken for soup... of course I bought it. So I make chicken soup – also delicious, and my husband loves it with noodles in it.

I was raised up on Campbell soup, and to me, there was nothing any better than tomato soup with a grill cheese sandwich. Learned that once I dumped that soup in a pot and added some milk, YUM, YUM.....But it is getting close to soup /crock pot making time.

Sounds like a great tomato soup recipe! Of course, if I could be in England, I would buy your great can of Heinz tomato soup! I can buy it here at my local PUblix but it is $6.00 a can!!
