Ingredients
Serves Four2 onions, peeled and chopped
1 carrot, peeled and diced finely
1 clove garlic, peeled and crushed
1 stick celery, finely chopped
2 tbsp. olive oil
450g/1lb fresh ripe tomatoes, halved
1 litre/1¾ pints vegetable stock
1 tsp sugar (optional)
salt and freshly ground black pepper
handful fresh basil, shredded (optional, but it really adds to the taste)
Method
1. Heat the oil in a large saucepan and add the onions, carrot and celery and garlic. Cover and cook gently for 10 minutes until soft.
2. Add the sugar (optional), salt, pepper and tomatoes. Stir and cook for another 5 minutes.
3. Add the stock, bring to the boil and simmer for 10 minutes. Liquidise until smooth.
4. If using the basil, stir in at the end.

I just made tomato soup, one of my favorites. My recipe is similar, but the veggies are roasted in the oven first. Yum!
looks good
I just put a meal of homemade tomato soup into the freezer for another day, to use up tomatoes and onions that I grew. I roasted the vegetables in the oven with garlic and basil, and will add stock and blend the mixture when I cook it into soup. A perfect autumn meal.
Gracias por la receta. Te mando un beso.
That is very much like the tomato soup I make too. 🍅🍅🍅
I like it !
This sounds and looks so delicious. I haven't had soup in a long while. I guess it's because it's really hot in Hawaii right now. I'll have to make some in another month or so.
Looks absolutely delightful!
I think it's the best thing for this time of year!!
Thanks for reminding us, Jαn!
That sounds very warming... Yes, soup-time has begun...
Oh, I love all the ingredients in this soup, Jan! Yes, Autumn and Winter are perfect seasons for soup! This looks and sounds delicious!
Sounds good to me, Jan.
A recipe to keep as we have a lot of tomatoes.
I realize I've never made tomato soup before. Well, I should!
Thank you.
I wanted to buy eggs from the farmer's wife, but she didn't have any. She offered me a chicken for soup... of course I bought it. So I make chicken soup – also delicious, and my husband loves it with noodles in it.

Best wishes from Viola
We are in the season of soups - so comforting and satisfying.
Yes, it is tomato soup time. It's getting a little cold in the evenings.
Thank you, Jan. God bless.
a great tasty recipe!
Looks good. I do love a good soup :-D
...I haven't had tomato soup in years!
I love the sound of this easy healthy recipe. We do love tomato soup and I'm ready for soup.
I was raised up on Campbell soup, and to me, there was nothing any better than tomato soup with a grill cheese sandwich. Learned that once I dumped that soup in a pot and added some milk, YUM, YUM.....But it is getting close to soup /crock pot making time.
Hi Jan,
I like very much tomato soup.
Thanks for the recipe.
Greetings and hugs
Maria

Boa terça-feira. Parece ser uma receita maravilhosa e deliciosa. Estamos perto da primavera e verão no Brasil, será época de comidas leves. Sua dica é ótima e interessante. Nunca tomei esse tipo de sopa.
Sounds like a good one.
Sounds tasty, I love most soups.
Take care, enjoy your day!
It's definitely soup season and this looks like a nice addition to the repertoire!
I love tomato soup, tomato and orange is a favourite. I just bought a soup maker to help make things easier as I can't always hold a knife these days.
Oh my....that looks delicious! I've already copied and pasted the recipe! Thanks, Jan.
Sounds like a great tomato soup recipe! Of course, if I could be in England, I would buy your great can of Heinz tomato soup! I can buy it here at my local PUblix but it is $6.00 a can!!
one of my favorites. i make it very similar...i add cream, to make it a creamier soup!!
La que yo hago es distinta, pero seguro que esta también está muy buena. Besos.
It is still so hot here to think of soup, but I have been making up stewed tomatoes from the garden and freezing them for this winter.
It almost seems like a sacrilege to have tomato soup without a grilled cheese sandwich !
